The culinary artistry of Executive Chef Ebony Baker was on show as she presented a meticulously curated 6-course degustation. Each dish a masterpiece, showcasing the finest native ingredients sourced from Byron Bay and our own property.

Savor the Highlights: From Octopus Carpaccio to Sugarcane Burn Dessert

There was a combination of exquisite flavours of dishes such as octopus carpaccio adorned with sunrise lime gel, seafood consommé infused with native ginger, and venison backstrap embellished with pepperberry jus and Davidson plum gel. Furthermore, lunch concluded with the acclaimed Sugarcane Burn dessert, a fitting finale to the gastronomic odyssey.
