Designed to be one of Australia’s most diverse and divine resort experiences, our team couldn’t be more excited to introduce you to our latest offering, Azure Bar and Grill.

Formerly the old Graze Restaurant, Azure Bar and Grill has recently been reinvented to embody the best of all we stand for: sophistication, simplicity and a fiercely sustainable approach.

Named after the dazzling bright blue shades of water that surround it, Azure is “carefree luxury meets effortless elegance”, with a strong dash of amazing customer service (yes, we smile – a lot).

What to Expect

With a drop-dead gorgeous poolside location and views of lush green gardens, it’s hard not to feel completely relaxed at our bar and grill.

We reckon it’s the perfect dining experience after a day healing, recharging or exploring Byron’s many unforgettable spots.

Azure offers a luxurious ambience with a comfortable family-friendly vibe (the kids will be ridiculously spoilt for choice when it comes to the woodfired pizzas, but our bet is they’ll clamour for the dessert version served with Nutella and vanilla ice cream!).

Gin-cured salmon…oyster mushroom risotto with truffle…handmade pasta and charcoal grilled meats cooked to perfection, the Azure accent is on a natural and locally sourced menu with the freshest quality ingredients.

To top it off, you can choose from our extensive wine list or one of our artisanal alcoholic bevvies created by our friendly bar staff.

Head Chef Simon Jones

Meet Our Head Chef – Simon Jones

Chefs garner plenty of attention these days, with some developing something akin to a cult following.

Azure is helmed by none other than Simon Jones, the former head chef of Marco Pierre White’s Michelin starred restaurant L’Escargot, in the heart of London’s lively Soho district.

Originally from London, Simon packed his bags to lend his creative powers down under after an inspired visit to the Northern Rivers, where he was blown away by the packed-to-the-rafters flavours of our region’s produce.

His ethos in the kitchen is: keep food simple, let the natural flavours take a starring role, and buy local and seasonal. Amen to that!

Azure Bar and Grill is open 7 days a week for breakfast, lunch and dinner.
Breakfast 7.00am – 10.30am
Lunch 12.00pm – 3.00pm
Dinner 6.00pm – 9.30pm
